Sesame Brittle

Whip up quick and fun sesame brittle candy in no time!
Ingredients:
  • 3/4 cup sugar
  • 1/4 cup honey
  • Pinch of salt
  • 1/4 teaspoon of ground nutmeg
  • 1 Tbsp water
  • 1 cup raw sesame seeds
  • 1 teaspoon of vanilla extract
  • 2 teaspoons butter
  • 1/4 teaspoon of baking soda
Instructions:
  • In a small, thick-bottomed saucepan, combine sugar, honey, water, salt, and nutmeg over medium heat. Stir until a smooth slurry forms.
  • Incorporate the unroasted sesame seeds into the mixture
  • In a pan, cook the sesame seed mixture until it turns an amber caramel color, stirring occasionally for about 5 to 10 minutes. If using a candy thermometer, heat until it reaches 300°F. Remove pan from heat, then stir in vanilla extract and butter. Once butter is fully melted, add baking soda - the mixture will foam slightly due to the reaction with caramelized sugar acid.
  • Spread the mixture onto a Silpat-lined baking sheet; if you don't have Silpat, you can use a buttered metal baking sheet and a metal spatula to separate the brittle once cooled.
  • After it's completely cooled and solidified (about 15-20 minutes), gently break it into pieces.
