Tantalize your taste buds with a Middle Eastern feast for a simple and healthy home dinner party.
Ingredients:
  • 376.25 gm caster sugar
  • 86.63 gm orange juice
  • 117.98 gm honey
  • 187.50 gm sesame seeds
Instructions:
  • Prepare a generously greased 26cm x 32cm (base) Swiss roll pan.
  • In a saucepan over low heat, mix sugar, orange juice, and honey until the sugar dissolves, about 2 to 3 minutes. Increase heat to medium-high and bring the mixture to a boil. Let it boil without stirring until it reaches 116°C on a candy thermometer or forms a soft ball when dropped in cold water, about 8 to 10 minutes.
  • Take the mixture off the heat and let it rest for 30 seconds to settle the bubbles. Stir in sesame seeds and then return the mixture to the heat. Boil without stirring until it reaches 138°C on a candy thermometer or forms a thread in cold water that can be snapped with your fingers. Let it sit off the heat for another 30 seconds.
  • Pour the mixture into the prepared pan and let it stand for 10 minutes. Score the brittle into 48 triangles using a knife, then cool completely in the pan. Snap into triangles and serve.
