Sesame seed crusted beef & noodle stir-fry

Sesame-crusted beef stir-fry with vibrant vegetables - a gourmet delight!
Ingredients:
  • 2 beef scotch fillet steaks, fat trimmed, thinly sliced
  • 55g (1/3 cup) sesame seeds
  • 450g thin hokkien noodles
  • 42.00 gm salt-reduced soy sauce
  • 40.00 ml dry sherry
  • 24.40 gm oyster sauce
  • 16.00 gm brown sugar
  • 1 garlic clove, thinly sliced
  • 3cm-piece fresh ginger, peeled, cut into matchsticks
  • 1 tsp bought minced chilli
  • 1/2 red capsicum, deseeded, thinly sliced
  • 1/2 yellow capsicum, deseeded, thinly sliced
  • 100g button mushrooms, thinly sliced
  • 1 bunch broccolini, trimmed
  • 100g sugar snap peas, trimmed, halved lengthways
Instructions:
  • Coat both sides of the beef in sesame seeds. Heat 3 teaspoons of oil in a wok over medium heat. Sear half of the beef for 1 minute on each side until golden. Transfer to a plate, cover with foil, and set aside. Repeat with the remaining beef using another 3 teaspoons of oil. Clean the wok if needed.
  • Place the noodles in a large heatproof bowl and cover with boiling water. Allow to soak for 2 minutes, then drain.
  • In a small bowl, blend soy sauce, sherry, oyster sauce, and brown sugar together.
  • Heat the rest of the oil in the wok over medium-high heat. Stir-fry garlic, ginger, chili, capsicum, mushroom, and broccolini stems for 2 minutes. Add the soy sauce mixture, sugar snap peas, and remaining broccolini. Boil and cook for 2 minutes until the sauce thickens slightly.
  • Combine the noodles and beef with the vegetable mixture, tossing them together until well mixed.
