Sesame Seed Brittle

Delicious crunchy sesame brittle - perfect for any dessert spread!
Ingredients:
  • 1 1/2 cups sesame seed
  • 1 cup sugar
  • 1/2 cup light corn syrup
  • 1/2 teaspoon kosher (coarse) salt
  • 1 tablespoon butter
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
Instructions:
  • Toast sesame seeds in a dry heavy skillet over medium-low heat for 5 to 7 minutes. Stir frequently until seeds start to brown, then stir constantly until golden brown. Remove from heat.
  • - Coat a 15x10x1-inch pan with cooking spray. - In a 2-quart microwavable bowl, combine sugar, corn syrup, and salt. Microwave uncovered on High for 4 minutes or until bubbling. - Add butter and toasted sesame seeds, stir well. - Microwave uncovered on High for 3 to 5 minutes, stirring every minute until golden brown.
  • Mix in the vanilla and baking soda until it foams. Quickly transfer the mixture to the pan and use a lightly greased spatula to spread it to 1/4-inch thickness. Let it cool entirely for approximately 30 minutes, then break into 1 1/2-inch pieces.
