Elevate shelf-fresh noodles and tender-crisp broccolini with a simple, flavorful Asian marinade.
Ingredients:
  • 1 x 440g pkt shelf-fresh udon noodles
  • 18.20 gm peanut oil or olive oil
  • 4 pork loin medallions
  • 2 bunches broccolini
  • 80ml (1/3 cup) sesame, ginger & soy marinade & sauce
  • 60ml (1/4 cup) water
Instructions:
  • Cook the noodles according to the instructions on the package.
  • In a large frying pan over medium heat, heat the oil until shimmering. Cook the pork for 3-4 minutes on each side, or until it reaches your desired level of doneness. Transfer to a plate and loosely cover with foil to retain warmth.
  • Toss broccolini into the pan and stir-fry for 2-3 minutes until vibrant in color and tender-crisp. Introduce noodles, sauce, and water, tossing together for 1-2 minutes until warmed through.
  • Slice the pork into thick pieces, then distribute the noodle mixture into serving dishes. Finally, layer the pork on top along with the pan juices before serving.
