Top crisp baby lettuce with tangy green apple, vibrant red pepper, and succulent shrimp.
Ingredients:
  • 8 uncooked large shrimp, peeled, deveined
  • Wooden skewers
  • Cooking spray
  • 1/4 teaspoon salt
  • Freshly ground black pepper
  • 2 teaspoons cider vinegar
  • 1 teaspoon olive oil
  • 1 teaspoon honey
  • 1/2 teaspoon toasted sesame oil
  • 1/2 teaspoon reduced-sodium soy sauce
  • 3 cups baby lettuce leaves
  • 1 Granny Smith apple, cut into thin matchsticks
  • 1/2 red bell pepper, cut into thin matchsticks
Instructions:
  • Preheat oven to 400°F and line a cookie sheet with parchment paper or foil.
  • Skewer 2 to 4 shrimp per skewer. Coat shrimp evenly with cooking spray and season with salt and pepper. Bake for 5 to 8 minutes until shrimp are pink.
  • In a small bowl, whisk together vinegar, olive oil, honey, sesame oil, and soy sauce until fully combined.
  • Combine crisp lettuce, fresh apple, and vibrant bell pepper in a generous bowl. Drizzle with zesty dressing and toss to coat. Spread the refreshing salad evenly on 2 elegant serving plates and crown each with succulent shrimp. Serve and indulge in flavorful bliss.
