Sesame shrimp and peppers - a flavorful, speedy delight with a nutty twist.
Ingredients:
  • 1 cup uncooked white rice
  • 1 pound medium shrimp, peeled and deveined
  • 0.25 teaspoon ground ginger
  • 0.25 teaspoon cayenne pepper
  • 1 clove garlic, minced
  • 1 tablespoon sesame seeds
  • 2 tablespoons sesame oil
  • 1 red bell pepper, sliced into thin strips
  • 3 green onions, sliced
  • 3 tablespoons teriyaki sauce
  • 0.5 pound sugar snap peas
  • 0.125 cup cornstarch
  • 0.75 cup chicken broth
  • 0.25 teaspoon salt
Instructions:
  • Bring a pot of salted water to a boil, then add rice. Lower the heat, cover, and let it simmer for 20 minutes.
  • Marinate shrimp with ginger, cayenne pepper, garlic, sesame seeds, and black pepper in a large plastic bag in the fridge while rice cooks.
  • In a large wok or skillet, swirl sesame oil and sizzle red bell pepper and green onions until slightly softened. Pour in teriyaki sauce, then toss in peas and shrimp with seasoning. Stir-fry for 4 minutes until shrimp turn opaque.
  • Combine cornstarch with chicken broth and pour the mixture into a hot wok. Cook until it boils, then season with salt and serve the shrimp mixture over rice.
