Ingredients:
  • 80ml (1/3 cup) lime juice
  • 40ml (2 tbsp) honey
  • 3cm peeled fresh ginger, grated
  • 40ml (2 tbsp) soy sauce
  • 120ml (6 tbsp) sesame oil
  • 100g dried vermicelli noodles
  • 300g snow peas
  • 1 cucumber
  • 8 spring onions (salad onions), sliced on the diagonal
  • 1000.00 ml leftover cooked turkey, shredded
  • 24.00 gm sesame seeds, roasted
Instructions:
  • Mix together the zesty lime juice, sweet honey, fresh ginger, savory soy sauce, and aromatic sesame oil in a bowl before moving on to the next step.
  • In a large bowl, soak vermicelli in boiling water until covered for 5 minutes. Drain and rinse, then set aside. Quickly blanch snow peas in salted boiling water for 30 seconds, then slice into strips. Cut cucumber into batons.
  • In a large bowl, combine the vegetables, noodles, and turkey. Drizzle the dressing over the mixture and toss to coat. Serve the dish sprinkled with sesame seeds on top.
