Elevate your pasta dish with succulent leftover turkey, a delicious secret to keep.
Ingredients:
  • 300g linguine
  • 40.00 ml sesame oil
  • 2 bunches thin asparagus, ends trimmed, roughly chopped
  • 3 garlic cloves, chopped
  • 20.00 ml red wine vinegar
  • 1 small red chilli, seeded, chopped
  • 130.00 gm (6 tbsp) chunky peanut butter
  • 60ml soy sauce
  • 320g cooked turkey
  • 1 Lebanese cucumber, halved, seeds removed, very thinly sliced
  • 3 spring onions, shredded lengthways
  • Toasted sesame seeds, to serve
Instructions:
  • Following the package instructions, cook the pasta until al dente. Rinse the cooked pasta under cold water, drain thoroughly, and transfer to a bowl. Add 1 tablespoon of sesame oil and mix well to evenly coat the pasta.
  • Quickly cook the asparagus in boiling salted water for 30 seconds, then cool in ice water.
  • Combine garlic, vinegar, sugar, chili, peanut butter, and soy sauce in a food processor. Blend until smooth, then slowly incorporate remaining sesame oil and warm water while processing.
  • Combine the shredded turkey with the pasta, asparagus, cucumber, and dressing, tossing gently to mix.
  • Serve the pasta in individual bowls and garnish with sliced spring onion and sesame seeds on top.
