Create delicious leftover turkey transformation for a crowd-pleasing encore dish.
Ingredients:
  • 500.00 ml coarsely shredded roast turkey
  • 1/2 wombok (Chinese cabbage), finely shredded
  • 55g bean sprout
  • 1 carrot, peeled, cut into matchsticks
  • 1 red capsicum, halved, seeded, thinly sliced
  • 125.00 ml Vietnamese mint leaves
  • 125.00 ml coriander leaves
  • 62.50 ml Thai basil leaves
  • 18.00 gm toasted sesame seeds
  • 24.40 gm fish sauce
  • 16.00 gm brown sugar
  • 21.00 gm lime juice
  • 1 fresh red chilli, seeded, finely chopped
  • 2 tsp sesame oil
  • 2 tsp finely grated ginger
Instructions:
  • For the sesame dressing, combine fish sauce, sugar, lime juice, chili, sesame oil, and ginger in a jar with a lid. Shake vigorously until fully mixed.
  • Combine turkey, cabbage, bean sprouts, carrot, capsicum, mint, coriander, and basil in a large bowl. Drizzle with dressing and toss gently to mix.
  • Evenly distribute the mixture into serving bowls. Sprinkle with sesame seeds just before serving for a delightful touch.
