Transform leftover roast turkey into an incredible weeknight dish with simple ingredients.
Ingredients:
  • 1 tsp chilli powder
  • 2.50 gm smoked paprika (pimenton) (see note) or regular paprika
  • 32.00 gm brown sugar
  • 125ml passata
  • 160g cooked turkey
  • 2 vine-ripened tomatoes, seeds removed, chopped
  • 1/4 telegraph cucumber, chopped
  • 1/2 red onion, chopped
  • 62.50 ml mint leaves, roughly chopped
  • Juice of 2 limes
  • 2 avocados
  • 1 garlic clove, crushed
  • 1 butter lettuce, leaves separated
  • 4 crunchy bread rolls, split
Instructions:
  • In a small saucepan, combine spices, brown sugar, oil, tomato passata, sea salt, and freshly ground black pepper. Simmer, then cook over medium-low heat for 4-5 minutes until thickened. Transfer to a bowl, add shredded turkey, and toss to combine. Let it cool slightly before serving.
  • Combine tomato, cucumber, onion, and mint in a bowl. Drizzle with half of the lime juice, toss gently to coat, then season to taste. Set aside.
  • Combine the creamy avocado with the zesty garlic and fresh lime juice. Sprinkle with sea salt and a touch of freshly ground black pepper for the perfect seasoning.
  • Spread the luscious avocado mixture on the base of the rolls, then generously layer with crisp lettuce, savory turkey mixture, and a dollop of zesty tomato salsa. Don't forget to serve with more of that flavorful tomato salsa on the side.
