Colorful Asian vegetable omelette - quick, healthy, and delightful.
Ingredients:
  • 100g dried rice vermicelli noodles
  • 250g packet rainbow salad mix (see note)
  • 125.00 ml fresh coriander leaves
  • 3 green onions, sliced diagonally
  • 1 long red chilli, deseeded, thinly sliced
  • 6 eggs
  • 21.00 gm soy sauce
  • 3.00 gm sesame seeds, toasted
  • 9.20 gm peanut oil
  • 76.25 gm oyster sauce
Instructions:
  • Add noodles and salad mix to a bowl, pour boiling water over them, and let them sit for 4 to 5 minutes until noodles are tender. Drain the water, then mix in coriander, onion, and chilli, and toss everything together.
  • In a large jug, combine eggs, soy sauce, and sesame seeds, whisking them together until well combined.
  • In a medium nonstick frying pan over medium heat, heat 1/2 teaspoon of oil. Pour in the 1/4 portion of the egg mixture, swirling the pan to evenly cover the base. Cook for about 1 minute until the mixture is just set.
  • Spoon a quarter of the noodle mixture over the egg in the pan. Cook for about 1 minute until the egg is set. Fold the omelette in half to seal the filling inside. Transfer to a plate and keep warm. Repeat with the rest of the ingredients to make a total of 4 flavorful omelettes.
  • Mix oyster sauce with 2 tablespoons of cold water. Drizzle the omelettes with the oyster sauce mixture and serve.
