Ingredients:
  • 1 cup uncooked wheat berries
  • 2 1/2 cups chicken broth
  • 1/2 cup chopped celery
  • 1/2 cup chopped seeded cucumber
  • 1/2 cup shredded carrot
  • 4 medium green onions, sliced (1/4 cup)
  • 2 tablespoons sesame seed, toasted
  • 2 tablespoons sugar
  • 2 tablespoons rice vinegar
  • 1 1/2 teaspoons sesame oil
  • 1 teaspoon Thai chili garlic paste
  • 1/2 teaspoon reduced-sodium soy sauce
Instructions:
  • In a 2-quart saucepan, bring wheat berries and chicken broth to a boil over high heat, stirring occasionally. Lower the heat, cover, and let it simmer for about 1 hour until the wheat is tender. Drain the wheat berries and let them cool to room temperature for approximately 20 minutes.
  • In a small jar with a tight-fitting lid, combine dressing ingredients and shake well until fully mixed.
  • Combine the rest of the salad ingredients in a medium bowl. Drizzle the dressing over the salad and mix well to ensure everything is coated. Just before serving, sprinkle the toasted sesame seeds on top if preparing in advance.
