Baked berry oats recipe

Indulge in protein-packed baked berry oats for a satisfying and energizing breakfast leading you through to lunch.
Ingredients:
  • 125g (11⁄3 cups) rolled oats
  • 40.00 ml hemp seeds
  • 4.00 gm baking powder
  • 2.50 gm ground cinnamon
  • 1 banana, mashed
  • 250ml (1 cup) skim milk
  • 150g (1 cup) frozen mixed berries, plus extra, to serve
  • 180g (2⁄3 cup) natural yoghurt
Instructions:
  • Preheat your oven to 190C/170C fan forced. Lightly coat four 250ml (1 cup) ovenproof ramekins or dishes with olive oil.
  • In a large bowl, mix together oats, hemp seeds, baking powder, and cinnamon. In a separate bowl, combine banana, eggs, and milk until well mixed. Gently fold the banana mixture into the oat mixture until just combined. Be careful not to overmix.
  • Take half of the oat mixture and distribute it evenly among the ramekins. Scatter half of the berries on top. Layer the remaining oat mixture and berries. Arrange the ramekins on a baking tray. Bake for 20 minutes or until golden and set. Serve warm with yogurt and extra berries.
