Savory sausage and tomato layered with potatoes, carrots, onions for a comforting dinner.
Ingredients:
  • 3 potatoes, thinly sliced
  • 3 carrots, thinly sliced
  • 1 large onion, thinly sliced
  • 0.5 cup uncooked long-grain rice
  • 2 (8 ounce) cans peas, with liquid
  • 1 (10.75 ounce) can condensed tomato soup
  • 1 (10.75 ounce) can water
  • 1 pound pork sausage
  • salt and pepper to taste
Instructions:
  • Preheat the oven to 350°F (175°C) and generously butter a large casserole dish.
  • Create a beautiful arrangement in the casserole dish by layering potatoes, carrots, and onions. Sprinkle the uncooked rice over the veggies, then add peas with their liquid and place the pork sausage on top.
  • Combine a can of water with the tomato soup, then pour the mixture over the sausage. Season generously with salt and pepper.
  • Cover and bake in a preheated oven for 1 hour, then uncover and bake for another hour.
