Seven-Layer Slaw

Vibrant veggie salad bursting with flavor, a breeze to make.
Ingredients:
  • 2 cups coleslaw mix
  • 2 cups shredded carrots
  • 2 cups broccoli slaw
  • 1 medium yellow or red bell pepper, chopped (1 cup)
  • 1 cup coleslaw dressing
  • Additional broccoli slaw, if desired
Instructions:
  • In the bottom of a 2 1/2-quart clear glass bowl, create colorful layers starting with 1 cup of coleslaw mix. Add 1 cup of carrots, followed by 1 cup of broccoli slaw and bell pepper. Repeat layering with the remaining coleslaw mix, carrots, and broccoli slaw.
  • Drizzle the dressing over the coleslaw and sprinkle some extra broccoli slaw on top. Cover and refrigerate for at least 2 hours, but no more than 24 hours. Give it a good toss before serving.
