One-pot Persian chicken and turmeric rice dish for a comforting and healthy meal.
Ingredients:
  • 3 cups water
  • 1.5 pounds boneless, skinless chicken breasts
  • 1 large onion, chopped
  • 6 cloves garlic, minced
  • 1 teaspoon ground turmeric
  • 1 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 2 cups basmati rice
  • 1 medium carrot, chopped
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh parsley
Instructions:
  • In a 4-quart pot, combine water, chicken breasts, onion, garlic, turmeric, salt, and pepper. Bring to a boil over medium-high heat, then reduce heat to medium, cover, and simmer for 20 to 25 minutes until chicken is cooked through (internal temperature should reach 165°F/74°C). Remove chicken from pot and set aside.
  • Thoroughly wash rice in a sieve under cold running water to remove excess starch.
  • Combine the rice and carrots with the flavorful broth in the pot. Bring to a gentle simmer, then lower the heat to medium-low, cover, and let it simmer until the rice is tender, approximately 20 minutes.
  • Shred the chicken using two forks.
  • Fluff cooked rice with a fork, mix in shredded chicken, and drizzle with lemon juice. Adjust salt to taste and sprinkle with parsley.
