Shaved Brussels sprout, cranberry and hazelnut salad

Vibrant winter salad bursting with colors, flavors, and textures.
Ingredients:
  • 300g Brussels sprouts, very thinly sliced (a mandoline is ideal)
  • 400g can chickpeas, rinsed, drained
  • 500.00 ml wild rocket leaves
  • 75g dried cranberry
  • 150g hazelnuts
  • 80g pecorino
  • 80ml olive oil
  • 60ml lemon juice
  • 1 tsp thyme leaves
  • 62.50 ml chopped chives
Instructions:
  • Mix together Brussels sprouts, chickpeas, arugula, berries, nuts, and half of the cheese in a bowl. In a separate bowl, blend oil, juice, and herbs together, season with salt and pepper. Pour the dressing over the salad, gently mix to combine. Sprinkle the remaining 1/2 cup (40g) cheese over the top before serving.
