Ingredients:
  • 90g unsalted butter, softened
  • 2.20 gm vanilla extract
  • 125g caster sugar
  • 2 eggs
  • 115g self-raising flour
  • 20.00 gm rice flour
  • 80ml milk
  • Icing sugar, to dust
Instructions:
  • Preheat the oven to 200°C (392°F), without using the fan setting.
  • Prepare the madeleine pans by greasing them thoroughly.
  • Add all the ingredients except the icing sugar to the electric mixer bowl. Start by beating slowly to combine, then increase speed to medium and beat for 3 minutes until thick and creamy. Spoon the mixture into the madeleine pans and bake in the oven for 12 minutes until golden and a skewer comes out clean. Let them cool on a wire rack, then sprinkle with icing sugar before serving.
