Bake delicious French madeleines with a sponge cake texture in unique shell-shaped molds.
Ingredients:
  • 2 large eggs
  • 0.25 cup butter
  • 0.75 teaspoon vanilla extract
  • 0.125 teaspoon salt
  • 0.33333334326744 cup white sugar
  • 0.5 cup all-purpose flour
  • 1 tablespoon lemon zest
  • 0.33333334326744 cup granulated sugar for decoration
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C. Grease and flour 12 (3-inch) madeleine molds; then, set them aside.
  • Melt the butter and allow it to cool to room temperature.
  • In a small mixing bowl, whisk eggs, vanilla, and salt together at high speed until light. Slowly incorporate sugar and beat at high speed until thick, pale, and ribbons form in the bowl when beaters are lifted, about 5 to 10 minutes.
  • Gradually sift flour into the egg mixture, folding gently after each addition.
  • Incorporate zest of lemon and drizzle melted butter around the batter's edge. Gently and swiftly fold butter into the batter.
  • Fill the molds with batter, allowing them to slightly mound above the tops.
  • Bake the cakes until they turn golden and the tops bounce back when lightly pressed with your fingertip, for about 14 to 17 minutes.
  • Carefully use the knife tip to release the madeleines from the pan, then flip them onto a cooling rack. Sprinkle the warm cookies with granulated sugar right away.
