Savory shepherd's pie featuring roasted Japanese sweet potatoes with tahini, green onions, tomato-sauced lamb, and chickpeas.
Ingredients:
  • 2 large white sweet potatoes
  • 1 pound ground lamb
  • 1 onion, finely chopped
  • 0.25 cup finely chopped leek
  • 0.25 cup finely chopped celery
  • 1 (16 ounce) can tomato sauce (such as Pomì)
  • 1 (15 ounce) can chickpeas, drained
  • 1 teaspoon ground cumin, or more to taste
  • 0.5 cup tahini
  • 0.5 cup finely chopped green onions
Instructions:
  • Preheat the oven to 450°F (230°C). Use a fork to prick sweet potatoes all over and place them on a baking sheet.
  • Bake until tender when pierced with a fork, 50 minutes to 1 hour in the preheated oven.
  • While you wait, heat up a large skillet over medium-high heat. Brown and crumble the lamb in the skillet for 5 to 7 minutes. Then, transfer the lamb to a plate.
  • Sauté onion, leek, and celery until tender, about 4 to 5 minutes. Add tomato sauce, chickpeas, cumin, salt, and pepper. Simmer on low heat for 5 to 10 minutes. Add lamb back to the skillet and simmer for another 1 to 2 minutes.
  • Lower oven temperature to 325 degrees F (165 degrees C) and transfer lamb mixture into a baking pan. Combine mashed sweet potato with tahini and green onions in a bowl, then spread it over the lamb.
  • Bake in the hot oven until bubbly all over and the top is golden brown, approximately 40 minutes.
