Upgrade classic shepherd's pie with flavorful ground turkey.
Ingredients:
  • cooking spray
  • 1.5 pounds russet potatoes, peeled and cut into 1 1/2-inch thick slices
  • 6 tablespoons butter, cut into pieces
  • 1 cup milk
  • salt and pepper, to taste
  • 1 pound ground turkey
  • 1 medium onion, chopped
  • 2 (1 ounce) packages instant chicken gravy mix
  • 1 cup water
  • 1 (16 ounce) package frozen peas and carrots, thawed
  • 2 cups shredded cheese of choice
Instructions:
  • Preheat your oven to a toasty 350°F (175°C) and lightly grease a medium baking dish.
  • Place potatoes in a saucepan, cover with water, and boil for 20-30 minutes until fork-tender. Drain and mash until smooth with an electric mixer. Mix in butter, milk, salt, and pepper to taste until desired consistency is reached.
  • In a large skillet over medium high heat, heat 1 tablespoon of oil. Saute turkey and onion until turkey is cooked through. Add gravy mix and water; stir until gravy thickens and bubbles. Season with salt and pepper to taste.
  • Spread the turkey mixture in the baking dish, then add a layer of peas and carrots, followed by mashed potatoes. Finish with a generous topping of shredded cheese.
  • Bake until the cheese is melted and the top of the potatoes is golden, approximately 20-25 minutes in the preheated oven.
