Garlic and onion sauteed shiitake mushrooms in a creamy wine reduction, tossed with angel hair pasta, Parmesan, and parsley.
Ingredients:
  • 6 ounces angel hair pasta
  • 6 ounces fresh sliced shiitake mushrooms
  • 1 clove garlic, minced
  • 0.5 onion, chopped
  • 0.25 cup white wine
  • 1 tablespoon olive oil
  • 0.25 cup chicken broth
  • 0.5 cup heavy whipping cream
  • salt to taste
  • ground black pepper to taste
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
Instructions:
  • Start by sauteing garlic and onion in olive oil until fragrant, then add mushrooms. Pour in chicken stock and wine, simmer until reduced by half. Stir in cream and continue cooking to reach your preferred thickness. Season with salt and pepper to your liking.
  • Cook the pasta in a large pot of boiling salted water until it is perfectly cooked to al dente perfection.
  • Drain the pasta and coat it with the sauce. Serve on small, heated plates, and sprinkle with grated Parmesan cheese and fresh parsley.
