Savory shiitake mushroom angel hair pasta with garlic, shallots, artichoke hearts, capers, and white wine.
Ingredients:
  • 1 pound angel hair pasta
  • 0.25 cup extra virgin olive oil
  • 2 cloves garlic, minced
  • 2 bulbs shallots, minced
  • 1 pound shiitake mushrooms, thinly sliced
  • 0.5 teaspoon dried thyme
  • 0.5 cup white wine
  • 4 (6 ounce) cans marinated artichoke hearts, drained and chopped
  • 0.25 cup small capers
Instructions:
  • 1. Boil a generous amount of salted water in a large pot. Cook the pasta for 8 to 10 minutes until al dente, then drain.
  • In a large heavy skillet, warm up some oil over low heat. Cook the garlic and shallots until fragrant. Turn up the heat to medium, and add mushrooms and thyme; saute until mushrooms start to soften. Pour in the wine to deglaze the pan and simmer briefly. Finally, add artichokes and capers, simmer for a few more minutes.
  • Drizzle the flavorful mushroom mixture over the pasta and present it for a delightful meal.
