Shortbread Christmas wreaths

Make festive buttery shortbread wreaths perfect for gifting.
Ingredients:
  • 250g butter, softened
  • 260g plain flour
  • 120g rice flour
  • 150g caster sugar
  • 1/2 tsp vanilla bean paste
  • 1/2 quantity royal icing (see notes)
  • Green liquid food colouring
Instructions:
  • Preheat your oven to 180C and prepare two baking trays by lining them with baking paper.
  • Beat the butter in a bowl with an electric mixer until it turns pale and creamy. Add the flour, rice flour, sugar, and vanilla, then stir until the dough comes together. Transfer the mixture to a lightly floured surface and knead until smooth.
  • Roll out the dough to a 3mm-thick disc. Cut discs using 4cm and 5cm round fluted cutters. Use a 1.5cm fluted cutter to make a hole in the center of each disc. Place on lined trays and bake for 10-12 minutes until lightly golden. Let them cool. Color half of the royal icing pale green. Pipe around the edges of each biscuit with the green icing. Add water to the other half of icing to make a runny paste and spread it over the biscuits. Allow the icing to set.
