Whip up this vibrant apple carrot salad for a refreshing summer picnic side.
Ingredients:
  • 2 tablespoons sesame seeds
  • 2 cups shredded carrots
  • 1 Granny Smith apple, cored and shredded
  • 0.5 cup chopped fresh parsley
  • 0.25 cup lemon juice
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon white sugar
  • 1 clove garlic, minced
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 2 tablespoons safflower oil
Instructions:
  • In a skillet over medium heat, toast sesame seeds until lightly browned and fragrant, stirring occasionally, for 3 to 5 minutes. Remove from heat.
  • Combine the carrots, apple, toasted sesame seeds, and parsley in a bowl.
  • In a separate bowl, whisk together lemon juice, vinegar, sugar, garlic, salt, and pepper. Slowly drizzle safflower oil into the lemon mixture while whisking continuously. Pour the dressing over the carrots and toss to coat.
