Irresistibly moist cinnamon apple cake for any occasion.
Ingredients:
  • 5 apples - peeled, cored, and shredded
  • 1 tablespoon ground cinnamon
  • 1 tablespoon white sugar
  • 0.5 cup olive oil
  • 0.33333334326744 cup orange juice
  • 1.5 cups white spelt flour
  • 1.5 teaspoons xanthan gum
  • 0.25 teaspoon salt
  • 2 teaspoons ground cinnamon
Instructions:
  • Preheat the oven to 400°F (200°C) and generously grease a 9-inch Bundt pan.
  • Combine the shredded apple with a mix of cinnamon and sugar in a bowl, ensuring everything is evenly coated. Reserve for later use.
  • In a large bowl, whisk together eggs, 1/2 cup sugar, and vanilla until fluffy. Add olive oil, orange juice, flour, xanthan gum, baking powder, salt, and 2 teaspoons cinnamon to make a batter. Fold in the apple mixture and transfer the batter to a prepared bundt pan.
  • Bake in a preheated oven for around 60 minutes or until a toothpick inserted into the center of the cake comes out clean. Let it cool in the pan for 15 minutes, then transfer onto a wire rack to cool completely.
