Shredded chicken, walnut & snow pea sprout baguette

Ingredients:
  • 1 large barbecued chicken
  • 190g (3/4 cup) good-quality whole-egg mayonnaise
  • 3 celery sticks, trimmed, washed, thinly sliced crossways
  • 80g snow pea sprouts, cut in half
  • 55g (1/2 cup) walnut halves, chopped
  • 3 green shallots, ends trimmed, diagonally thinly sliced
  • Salt & freshly ground black pepper
  • 6 half (small) baguettes (French sticks)
  • 8 mignonette lettuce leaves, washed, dried, shredded
Instructions:
  • Shred the chicken, disposing of the bones, skin, and seasoning. Transfer the shredded chicken to a large bowl.
  • Combine the mayonnaise, celery, snow pea sprouts, walnuts, and green shallots with the chicken, gently mixing until all ingredients are well incorporated. Finally, season with salt and pepper to taste.
  • Trim and halve the baguettes. Arrange lettuce on the bottom halves. Spoon on the chicken mixture, then cover with the top baguette halves.
