Shredded chicken salad

Ingredients:
  • 2 chicken breast fillets
  • 2cm piece ginger
  • 1 clove garlic
  • 1 shallot, chopped
  • 250ml (2 cups) water
  • 1/2 baby wombok, shredded
  • 1 small red onion, finely sliced
  • 1 carrot
  • 1 Lebanese cucumber, seeded and julienned
  • 1 bunch coriander leaves
  • 1 chilli, chopped
  • 82.50 ml chopped peanuts, toasted
  • 20.00 ml crispy fried shallots
  • Limes, to serve
  • Extra coriander, to serve
Instructions:
  • Poach 2 chicken breast fillets with a 2cm piece of ginger, 1 clove of garlic, and 1 chopped shallot in 2 cups of water for 12 minutes until fully cooked. Once cooled, shred the chicken into a large bowl.
  • Combine shredded baby wombok, finely sliced red onion, julienned carrot, and seeded Lebanese cucumber in a bowl. Mix thoroughly.
  • Sprinkle a bunch of fresh coriander leaves and one chopped chilli over the dish, then top with 1/3 cup of toasted chopped peanuts and 1 tablespoon of crispy fried shallots. Serve with limes and extra coriander on the side.
