Shrimp, Pasta and Pepper Bake

Try this delicious and hearty shrimp and mushroom pasta bake loaded with veggies.
Ingredients:
  • 1 package (16 oz) uncooked mostaccioli pasta
  • 1/2 cup red bell pepper strips
  • 1/2 cup green bell pepper strips
  • 1 can (14.5 oz) Muir Glen™ organic diced tomatoes, undrained
  • 1 package (12 oz) frozen shelled deveined cooked small shrimp, thawed
  • 1 can (8 oz) Muir Glen™ organic tomato sauce
  • 1 jar (4.5 oz) sliced mushrooms, drained
  • 1 teaspoon dried oregano leaves
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 cup grated Parmesan cheese
Instructions:
  • Preheat oven to 350°F. Cook pasta according to package instructions; drain well.
  • Place the pasta in a 3-quart casserole dish or a 13x9-inch glass baking dish without greasing it. Stir in peppers, tomatoes, shrimp, tomato sauce, mushrooms, oregano, and red pepper flakes. Sprinkle with cheese, then cover with foil.
  • Bake until piping hot, for 15 to 20 minutes.
