Spicy Espelette pepper enhances shrimp pasta with flavorful herb and feta cheese sauce.
Ingredients:
  • 5 ounces spaghetti
  • 1 tablespoon olive oil
  • 2 tablespoons diced red onion
  • 6 ounces frozen, cooked shrimp
  • 1 teaspoon Espelette pepper powder, or to taste
  • 5 ounces crumbled feta cheese
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh mint
  • 2 teaspoons chopped fresh chives
Instructions:
  • 1. Boil a generous amount of lightly salted water in a large pot. Cook the spaghetti until al dente, stirring occasionally, for about 11 minutes. Drain thoroughly.
  • In a large skillet over medium heat, sauté onion in olive oil until softened, for about 2 minutes. Stir in frozen shrimp and Espelette pepper, then simmer over medium-low heat until shrimp is no longer frozen, for 3 to 5 minutes.
  • Combine drained spaghetti and feta cheese in the skillet over medium-high heat. Stir until feta melts into a creamy sauce. Remove from heat and mix in parsley, mint, and chives. Serve on 2 plates.
