Garlicky shrimp in white wine sauce with feta, tossed with pasta and vibrant tomato sauce.
Ingredients:
  • 3 tablespoons olive oil
  • 1 pound shrimp, peeled and deveined
  • 5 cloves garlic, minced
  • 1 tablespoon white wine
  • 1 pound linguine pasta
  • 2 tomatoes, chopped
  • 1 teaspoon dried oregano
  • 0.5 teaspoon dried basil
  • 1 (6 ounce) package crumbled feta cheese
Instructions:
  • Heat 2 tablespoons of olive oil in a skillet over medium heat. Sauté shrimp, garlic, and white wine for 5 minutes until shrimp turns pink. Use a slotted spoon to transfer shrimp to a plate and set aside.
  • Bring a large pot of water to a gentle boil with a pinch of salt. Cook pasta until al dente, about 8 to 10 minutes. Drain well.
  • Sauté tomatoes in 1 tablespoon of oil, oregano, and basil in the wine mixture over medium heat until tender, about 10 minutes, while the pasta is cooking.
  • Combine the hot pasta with shrimp, tomato sauce, and feta, allowing the feta to melt slightly. Serve and enjoy!
