Colorful shrimp and pepper stir-fry with snow peas. Perfect over rice or noodles.
Ingredients:
  • 1/2 cup chicken broth
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon brown sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon crushed red pepper
Instructions:
  • Combine chicken broth, soy sauce, rice wine vinegar, brown sugar, cornstarch, garlic powder, and crushed red pepper in a small bowl; mix well and set aside.
  • In a sizzling wok, heat 1 tablespoon of oil until shimmering. Add red pepper, yellow pepper, red onion, snow peas, and green onion. Stir-fry until veggies are vibrant and just tender, around 3 to 4 minutes. Transfer the colorful mix to a spacious bowl.
  • Reduce heat to medium-high, then drizzle in the remaining 1 tablespoon of oil. Sear shrimp for 2 minutes, flipping halfway. Reintroduce the veggies. Mix sauce well and drizzle over shrimp and veggies. Stir continuously until the sauce simmers and thickens, about 1 to 2 minutes.
