Summery shrimp burgers infused with zesty lemon and butter. Perfect for a light and delicious lunch!
Ingredients:
  • 0.75 pound raw, peeled shrimp
  • 1 egg, beaten
  • 0.25 cup bread crumbs
  • 1 small lemon, juiced
  • 1 tablespoon lemon zest
  • 1 teaspoon seafood seasoning (such as Old Bay®)
  • ground black pepper to taste
  • 2 tablespoons frozen butter cut in small pieces
  • 2 tablespoons canola oil, or as needed
Instructions:
  • Chop 3 or 4 shrimp, then pulse the rest in a food processor before combining all shrimp in a bowl.
  • In a bowl, mix together egg, bread crumbs, lemon juice, lemon zest, seafood seasoning, and black pepper. Incorporate shrimp and butter. Shape into 3 patties and refrigerate for at least 30 minutes.
  • Warm oil in a skillet on medium heat. Sear patties until golden brown on one side, about 4 to 5 minutes. Then, flip and cook until the other side is golden brown, another 4 to 5 minutes.
