Spicy garlic tomato sauce cooked with shrimp, perfect over pasta.
Ingredients:
  • 0.25 cup olive oil
  • 1 shallot, minced
  • 3 cloves garlic, minced
  • 1 tablespoon red pepper flakes, or to taste
  • 1 (14.5 ounce) can fire-roasted diced tomatoes
  • 3 tablespoons tomato paste
  • 0.5 cup dry white wine
  • 1 pound large shrimp, peeled and deveined
  • 0.5 tablespoon dried basil
  • 1 pinch ground black pepper to taste
Instructions:
  • In a large skillet over medium-high heat, sauté shallot and garlic in olive oil until tender, about 5 minutes. Add red pepper flakes; cook for 1 minute to enhance the flavor. Mix in fire-roasted tomatoes and tomato paste, then add white wine to thin out the sauce. Cook until the sauce thickens and bubbles, for about 4 to 5 minutes.
  • Lower the heat to a gentle simmer. Introduce the shrimp into the tomato mixture and sauté them until they turn pink and are fully cooked, approximately 5 minutes. Finish by seasoning with parsley, basil, and a sprinkle of black pepper.
