Shrimp in Garlic Cream Sauce over Rice

Elevate shrimp and rice with a flavorful garlic cream sauce enhanced with sherry in this delicious, simple dish.
Ingredients:
  • 1 tablespoon olive oil
  • 0.5 cup diced onion
  • 0.5 cup diced celery
  • 1 cup uncooked jasmine rice
  • 1 cup chicken stock
  • 2 pounds small raw shrimp, peeled and deveined
  • 0.5 cup fresh lemon juice
  • 0.5 cup sherry
  • 1 tablespoon hot sauce (such as Tabasco®)
  • 1 cup heavy cream
  • 1 pinch paprika
Instructions:
  • In a pan over medium heat, sauté onion, celery, and garlic in olive oil until soft, approximately 5 minutes.
  • Add rice to the pot and toast it for 5 minutes, stirring often. Pour in chicken stock and bring to a boil. Cover, lower the heat, and simmer for 15 minutes without peeking.
  • Cook shrimp: Melt butter in a big skillet over medium heat and sauté garlic until fragrant, for 1 to 2 minutes, stirring often.
  • Combine shrimp, lemon juice, sherry, and hot sauce in the pan. Cook until shrimp are pink, for 2 to 3 minutes. Add cream and heat without boiling. Season with salt and pepper to taste.
  • Serve the shrimp and cream sauce over the rice, sprinkle with paprika, and enjoy.
