Shrimp Lo Mein

Quick and flavorful Asian shrimp stir-fry with veggies and Chinese noodles for an easy homemade dinner in just over an hour.
Ingredients:
  • 1 egg white
  • 2 teaspoons dry sherry, if desired
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 1 1/2 tablespoons cornstarch
  • 1 cup fat-free reduced-sodium chicken broth
  • 3 tablespoons soy sauce
  • 1 1/2 tablespoons grated gingerroot
  • 1 1/2 teaspoons cornstarch
  • 1 package (8 ounces) dried Chinese noodles or 8 ounces uncooked thin spaghetti
  • 6 green onions, cut into 3/4-inch pieces
  • 6 bok choy stems with leaves, sliced (3 cups)
  • 2 medium stalks celery, cut into diagonal slices (1 cup)
Instructions:
  • Whisk together egg white, salt, sherry, and oil in a medium glass or plastic bowl. Gently fold in shrimp and 1 1/2 tablespoons of cornstarch. Cover and refrigerate for at least 30 minutes, but no more than 8 hours.
  • Combine the broth, soy sauce, gingerroot, and 1 1/2 teaspoons of cornstarch in a mixing bowl.
  • Cook noodles according to package instructions. Remove noodles from water using tongs and drain thoroughly. Add shrimp to the boiling water and gently stir in a circular motion for about 2 minutes until shrimp turn pink; then drain.
  • Spritz a nonstick wok or a 12-inch skillet with cooking spray and heat it over medium-high heat until the spray bubbles. Toss in green onions, bok choy, and celery, stir-frying for 3 minutes. Then, add the broth mixture and cook while stirring for 1 1/2 minutes. Mix in the noodles and shrimp and heat everything through.
