Creamy, cheesy shrimp spread on tortilla chips and broiled into irresistible nachos.
Ingredients:
  • 1 (14.5 ounce) package tortilla chips, or to taste
  • 2 pounds shredded Monterey Jack cheese
  • 1.5 pounds large peeled and deveined cooked shrimp, tails removed and shrimp quartered
  • 1 cup mayonnaise
  • 4 chipotle peppers in adobo sauce, chopped
  • 0.5 cup chopped fresh cilantro
  • 0.25 cup dried minced onion (such as McCormick® Coarse Grind Blend White and Green Onions)
  • 1.5 tablespoons ground cumin
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and elegantly line a baking sheet with aluminum foil.
  • Arrange tortilla chips in a single layer on the baking sheet.
  • Combine Monterey Jack cheese, shrimp, creamy mayonnaise, smoky chipotle peppers in adobo sauce, fresh cilantro, minced onion, aromatic cumin, and zesty black pepper in a bowl. Top tortilla chips with the flavorful mixture.
  • Place the nachos in the preheated oven to bake for 3 minutes. Then, switch on the broiler and broil the nachos until they turn a light golden brown, which should take 3 to 4 minutes. Let the nachos cool at room temperature for approximately 2 minutes before serving.
