Whip up a delicious shrimp piccata with artichokes and capers over pasta for a restaurant-worthy Italian meal at home.
Ingredients:
  • 1 (16 ounce) package linguine pasta
  • 0.25 cup olive oil
  • 0.25 cup butter
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 10 baby bella mushrooms, sliced
  • 2 cloves garlic, chopped
  • 1 (6 ounce) jar marinated artichoke hearts, chopped, with juice
  • 0.5 lemon, juiced
  • 3 tablespoons capers with juice
  • 1 splash dry white wine
Instructions:
  • Boil a pot of salted water. Cook linguine until al dente, around 11 minutes; then drain.
  • In a saucepan over medium heat, sauté shrimp, mushrooms, and garlic in olive oil and butter until fragrant, for 1 to 2 minutes. Stir in artichokes, lemon juice, capers, and white wine, simmer until shrimp is cooked and mixture is bubbling, about 10 minutes.
  • Serve the succulent shrimp piccata over separate portions of pasta and sprinkle with a touch of salt and pepper for a burst of flavor.
