Shrimp Scampi with Rice

Delicious shrimp and rice dish ready in 30 minutes on the stove top.
Ingredients:
  • 1 box (10 oz) frozen white & wild rice (with green beans)
  • 1 teaspoon butter or margarine
  • 1 teaspoon olive oil
  • 2 cloves garlic, finely chopped
  • 1/2 lb uncooked deveined peeled medium (31 to 35 count) shrimp
  • 2 tablespoons dry white wine or chicken broth
  • 1 tablespoon chopped fresh or 1 teaspoon parsley flakes
Instructions:
  • Prepare rice in a 2-quart saucepan following the instructions on the box.
  • In a skillet over medium-high heat, melt butter with oil and garlic in an enticing aroma. Add shrimp and sauté for 3 to 4 minutes until they turn a beautiful pink color. Add wine and parsley, and simmer for 1 minute for enhanced flavors.
  • Spoon the fluffy rice onto a beautiful serving platter and layer the succulent shrimp on top, drizzling with the flavorful juices from the skillet.
