Tender shrimp marinated and fried to perfection.
Ingredients:
  • 0.5 cup rice wine
  • 0.25 teaspoon salt
  • 0.5 pound fresh shrimp, peeled and deveined
  • 2 quarts oil for deep frying
  • 0.25 cup all-purpose flour
  • 0.33333334326744 cup ice water
  • 0.25 cup cornstarch
  • 1 egg yolk
  • 0.25 teaspoon white sugar
  • 1 teaspoon shortening
  • 0.5 teaspoon baking powder
Instructions:
  • Combine rice wine and salt in a medium bowl, then add shrimp to the mixture. Marinate covered in the refrigerator for at least 20 minutes.
  • Preheat oil in a deep-fryer or large wok to 375 degrees F (190 degrees C).
  • Combine all-purpose flour, ice water, cornstarch, egg yolk, salt, white sugar, shortening, and baking powder in a medium bowl.
  • Individually coat each shrimp in the flour mixture, then gently place a small batch into the hot oil. Fry until beautifully golden all around, approximately 1 1/2 minutes. Transfer onto paper towels using a slotted spoon to drain excess oil. Enjoy warm.
