Spicy Sichuan pepper and crushed chilies elevate this tangy potato side dish.
Ingredients:
  • 0.66666668653488 pound waxy potatoes
  • 1 tablespoon vegetable oil
  • 2 teaspoons dried crushed red pepper flakes
  • 1/2 teaspoon ground Sichuan pepper
  • 1 clove garlic, minced
  • 1 tablespoon black rice vinegar (such as Chinkiang)
  • 1 tablespoon soy sauce
  • 1 pinch flaked salt
  • 1 teaspoon fresh cilantro leaves, or to taste
Instructions:
  • Peel and cut potatoes into 1/4-inch matchsticks. Rinse well under running water until clear. Soak the potatoes in water for 5 to 10 minutes.
  • Drain and gently pat dry the potatoes.
  • 1. Preheat a wok over medium-high heat. Drizzle with oil, then sprinkle in pepper flakes and Sichuan pepper. Stir for 30 seconds until fragrant. Add in potatoes and garlic, toss and cook until potatoes start to soften, roughly 5 minutes. Stir in vinegar, soy sauce, and salt. Combine well and cook for an additional 1-2 minutes until flavors meld. Enjoy!
  • Garnish with fresh cilantro leaves before serving.
