Simple air fryer lemon cake recipe

Quick and delicious air fryer lemon cake with only 5 ingredients. Ready in under 30 minutes. Enjoy with cream, berries, or on its own.
Ingredients:
  • 150g butter, at room temperature
  • 140g (2/3 cup) caster sugar
  • 30.00 ml finely grated lemon rind
  • 80ml (1/3 cup) lemon juice
Instructions:
  • Prepare a 20cm round cake pan by greasing it and lining the base with baking paper.
  • Combine butter, sugar, flour, eggs, lemon rind, and juice in a bowl. Beat with electric beaters for 3-4 minutes until pale and creamy. Spoon batter into prepared pan and smooth the surface.
  • Place the pan in the air fryer basket, set the air fryer to 160C, and bake for 25 minutes or until a skewer inserted in the center comes out clean. Let it rest for 5 minutes before transferring to a wire rack to cool. Enjoy!
  • Enjoy the cake warm or at room temperature.
