Simple chopped salad

Versatile salad that can be enjoyed alone or customized to your liking.
Ingredients:
  • 4 spring onions
  • 1 cucumber
  • a few sprigs of fresh basil
  • 2 small ripe avocados
  • 1 round lettuce
  • 1 punnet of cress
  • 3 tablespoons extra virgin olive oil
  • 1 lemon
  • sea salt
  • freshly ground black pepper
Instructions:
  • Prepare a crisp, tasty chopped salad by trimming spring onions and cucumber on a large board. Roughly chop them and combine with chopped basil. Remove avocado stones, scoop out the flesh, and add it to the board. Snip cress over the mixture and continue chopping. Create a well in the middle, add olive oil, squeeze lemon juice, season with salt and pepper, toss, and serve.
