Ingredients:
  • 1 cup cottage cheese
  • 3 eggs
  • 0.25 cup all-purpose flour
  • 2 tablespoons melted butter
  • 0.25 teaspoon salt
  • 1 teaspoon butter, or as needed
  • 0.25 cup blueberries, or to taste
Instructions:
  • Place cottage cheese in a sieve over a bowl and gently press down occasionally for about 1 hour until it has dried out.
  • In a medium bowl, whisk together eggs, cottage cheese, flour, melted butter, and salt until well combined.
  • Warm butter in a skillet over medium-high heat. Spoon batter into the skillet, add blueberries, and cook until golden brown, around 2 to 3 minutes per side.
