Simple lemony spring greens

Brighten your greens with a zesty lemon dressing for a delightful side dish.
Ingredients:
  • 1 lemon
  • 2 tablespoons extra virgin olive oil
  • sea salt
  • freshly ground black pepper
  • 500 g spring greens
Instructions:
  • 1. Finely grate the lemon zest onto a cutting board using a microplane, then transfer to a jam jar. 2. Cut the lemon in half and squeeze half the juice into the jar, making sure to catch any pips with your fingers. Save the other half of the lemon for future use. 3. Add extra virgin olive oil, a pinch of salt, and pepper to the jar. Secure the lid tightly and shake well. 4. Taste the dressing and adjust with more lemon juice or oil if needed - aim for a slightly acidic and zingy flavor to dress your spring greens. 5. Fill a large saucepan with salted cold water and bring to a boil. 6. Trim and slice the spring greens lengthwise, then finely slice them. Add the spring greens to the boiling water and cook for 3 to 4 minutes until tender and vibrant green. 7. Drain the greens in a colander, steam dry for a minute, then return to the pan. 8. Shake the dressing again and pour it over the greens. Toss gently with tongs while still hot to absorb the flavors. Serve immediately in a bowl.
