Try our delicious salmon chowder - a perfect way to showcase small pieces of salmon. Pair with crispy sourdough toast for a satisfying meal.
Ingredients:
  • 1 cup milk
  • 4 slices bacon
  • 0.5 cup chopped onion
  • 3.5 cups chicken broth
  • 1 (5.5 ounce) package scalloped potato mix
  • 1 (15 ounce) can whole kernel corn
  • 0.25 teaspoon ground black pepper
  • 1 pound salmon fillet
  • 0.5 cup evaporated milk
  • 1 green onion, thinly sliced
  • 0.5 teaspoon dried dill
Instructions:
  • Dice the bacon, then fry it in a soup pot until crispy. Transfer the bacon to a paper towel to drain.
  • Cook chopped onion in the flavorful bacon grease until softened. Stir in chicken stock, scalloped potato mix, undrained can of corn, and a dash of fresh ground pepper. Bring to a boil, then let it simmer for 20 minutes.
  • Prepare the salmon by trimming the tapered edges and smashing the trimmings with a meat pounder before adding to the pot. Check for any stray bones in the remaining filet, remove them, and then cut the salmon into 1/2 to 3/4 inch cubes, setting them aside for later use.
  • Once the potatoes are rehydrated but slightly firm, introduce the salmon, bacon, green onion, and dill. Cook for an additional 5 minutes. Finish off by adding the milk and evaporated milk, stirring and cooking until heated through.
