Simple salmon sarciado: salmon in tangy tomato sauce with onions and garlic.
Ingredients:
  • 3 tablespoons cooking oil, divided
  • 2 salmon steaks
  • salt and pepper to taste
  • 1 onion, chopped
  • 2 cloves garlic, crushed
  • 2 tomatoes, diced
  • 1 large egg, beaten
Instructions:
  • In a skillet over medium heat, heat 2 tablespoons of oil. Season salmon steaks with salt and pepper, then sear in the hot oil for about 2 minutes on each side until lightly cooked. Transfer the salmon to a plate and set aside.
  • In a skillet over medium heat, heat the last tablespoon of oil. Sauté onion and garlic until fragrant, for approximately 5 minutes. Add diced tomatoes, salt, and pepper. Simmer until tomatoes create a sauce, around 5 minutes.
  • Place the salmon back in the skillet and let it simmer in the flavorful tomato sauce until it easily flakes with a fork, approximately 10 minutes. Gently fold in the beaten egg into the sauce until well combined. Serve the delicious dish hot and enjoy!
