Juicy peak-season tomatoes tossed with vinaigrette, red onion, basil, and mint - a refreshing summer staple.
Ingredients:
  • For the vinaigrette
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 1/4 cup extra-virgin olive oil
  • For the salad
  • 1/4 of a medium red onion, very thinly sliced
  • 2 pounds ripe tomatoes, any and all varieties welcome
  • 1 teaspoon kosher salt
  • Freshly ground black pepper, to taste
  • 1/4 cup fresh basil, chiffonade
  • 2 tablespoons fresh mint, chiffonade
Instructions:
  • Prepare the vinaigrette by whisking together vinegar, mustard, and honey until the honey dissolves. Slowly incorporate the olive oil until well blended.
  • Marinate the red onions: Mix the sliced onions with the vinaigrette, ensuring they are well coated. Let the flavors meld as you prepare the salad.
  • Prepare the tomatoes: Remove the stem and base from the tomatoes. Slice tomatoes into 1/2-inch-thick slices. Halve any cherry tomatoes.
  • To serve, place the tomatoes on a large plate or medium platter and sprinkle both sides with salt and black pepper. Drizzle the dressing and onions over the tomatoes, gently mixing everything together with your hands. Garnish with basil and mint, adjust seasoning if necessary, and serve promptly.
