Delight in a modern twist on Christmas cake using only three ingredients, featuring the rich depth of iced coffee.
Ingredients:
  • 1kg (5 1/2 cups) mixed dried fruit
  • 600ml iced coffee flavoured milk
  • 300g (2 cups) self-raising flour
Instructions:
  • In a large bowl, mix together the dried fruit and iced coffee-flavored milk. Stir well to combine. Cover the bowl and refrigerate overnight to allow the flavors to meld together.
  • Allow the bowl to sit at room temperature for 30 minutes after removing it from the fridge.
  • Preheat the oven to 180C/160C fan forced. Grease a 22cm round cake pan and line the base and side with baking paper.
  • Combine the flour with the fruit mixture until just mixed. Transfer the batter into the prepared pan, smoothing the surface. Bake for 1 hour 30 minutes or until a skewer inserted in the center comes out clean. Allow to cool in the pan for 30 minutes before transferring to a wire rack to completely cool.
